We source organic, sustainable, cacao beans

we hand-sort, roast, then crack the beans to separate the shell from its center (or nib)

The nib is stone-ground reducing it to a liquid (or cocoa liquor) within 1 hour 

Grinding of the cocoa liquor continues for approximately 12 hours until we are ready to add sugar

We use maple sugar made from 100% Grade A Maine Maple Syrup

The blend of cocoa liquor & maple sugar are stone ground for up to 60 hours

That’s it … our base chocolate is made from only 2 ingredients + patience to get it right.  There’s no emulsifiers or added cocoa butter.
